Almond Banana Muffins

A yummy paleo recipe inspired by the Almond Banana Chocolate Chip Muffins at Multiply Delicious. I have made them as mini-muffins (about 24) and regular muffins (12):

Ingredients

  • 3/4 c almond butter
  • 1 c almond flour
  • 3 bananas, mashed
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon

Directions

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients in large bowl until a smooth “batter” forms.
  3. Evenly distribute batter among all cups in a muffin tin.
  4. Bake for approximately 20-25 minutes, or until a toothpick pricked into the center of a muffin comes out clean.

Recipe Tips

The ripeness of the bananas will not only affect how easy they are to mash but also the sweetness of the muffins.

I prepared the muffin tin with a tiny bit of coconut oil to ensure easy removal of the finished muffins.
